Honey Mustard Roast Chicken

Roast chickens are probably one of my favourite things to cook you can add loads of different ingredients to change it up, they are really easy to cook and you can also use left overs for a variety of recipes.Here’s something I tried tonight….


Whole chicken4 garlic cloves1/2 red onionSalt & pepper2 tsp All purpose seasoning1 tsp Mixed herbs1 tsp Paprika1 tsp Mustard 1 tbsp Honey2 tbsp Rapeseed oil

Method1. Cut the onion into chunks and place inside the carcass with the peeled garlic cloves. I like to leave the string around the chicken as this helps keep the meat tender.2. Season the chicken with the salt, pepper, AP seasoning, mixed herbs and paprika 3. In a bowl mixed the oil, honey and mustard. 4. Rub the mixture into the chicken, cover with foil and cook for 60mins basting throughout5. Remove the foil and cook for an extra 30/40mins depending on the size of the chicken6. To make sure the chicken is cooked, ensure the juices run clear. Turn the chicken upside down to allow the juices to run into the meat.7. Rest for about 20/25  mins8. Serve and enjoy with a nice salad & cous cous
