Things I’m loving at the moment…

As summer approaches, well tries to approach! (This morning it was 6 degrees when I left for work) I am really getting into making nutritious yummy food again. Winter is about comfort food, roast dinners, stews, you know real hearty food. When it’s lighter and warmer I find myself craving fresh salads. Obviously salads can be super boring so anything goes in my salads..literally!Here’s a yummy salad I made this week…

I used left over chicken breast, from a roast chicken I made on Sunday, spinach, plum tomatoes, cucumber, raw mushrooms and strawberries. I always add fruit to my salads, it’s a great way to add different flavours and sweetness to your meal.I probably eat spinach everyday at least once sometimes twice. It’s fantastic for you. It’s low in fat and even lower in cholesterol, spinach is high in niacin and zinc, as well as protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese. In other words, it’s packed with great things for every inch of your body!It’s also inexpensive, not like poncy salad leaves! LolI usually make a quick salad dressing which a beautiful friend of mine gave me a recipe for. It’s basically a honey mustard dressing.3 parts oil (I use rapeseed oil)1 part white wine vinegarsqueeze of honeySalt & pepper1 tsp of mustard (I use wholegrain)1 clove of crushed garlicIt lasts for a little while in the fridge and it’s fresh and classic. You might want to alter the ingredients depending on your palette Sorry no picture but I’ll post one later 😘Another thing I’m addicted to at the moment is Meridian Peanut Butter. I’ve always loved PB, but most types are full of salt and sugar and really not that great for you. Meridian has no added salt or sugar – it contains naturally occurring sugars. It’s free from wheat, gluten and dairy and suitable for vegetarians and vegans.
